The Greeks have graced us with many things: the concept of democracy, organized societies, philosophers, physicists, astronomers, mathematicians, and more. Also, incredible myths about Gods and heroes: Hercules’ strength, Narcissus’ beauty, Icarus and his ambition, are just some of what Greek mythology has to offer. Hestia, goddess of the hearth and home, was a sister to Zeus, Poseidon, Hades, Demeter, and Hera. The goddess that stands for the culinary arts, basically. Zeus assigned her the duty of feeding the Gods and maintaining the fires of the Olympian hearths. Rumors has it that she often served them this omelet - okay maybe not, but nevertheless it's a God worthy meal. Here comes the recipe!
Put some oil on a nonstick pan and cook the lamb. Clean the pan when you're done.
Cut the cucumber into small, cute pieces. DON'T EAT THEM YET. Cut the tomatoes in half, and slice the onion.
Put the pan over medium heat, add the butter and smear it all over it evenly.
Mix the eggs, the salt, and pepper in a bowl.
Add the eggs mix to the pan (still medium heat!).
This is the birth of an omelet. The making of a hero. Don’t move it, don’t try to flip it, just let it get ready on its own.
Once the eggs have set, add the lamb, tomatoes, cucumber, onions, olives and cheese. Now add the tzatziki and sprinkle some fresh cut parsley on it. Yum!
Turn of the heat, close the omelet and let it rest for 20 seconds. Now you are ready to invade Troy, steal Helen, go to the Underworld and visit Persephone, swim and chill with Poseidon or whatever you want!
