This is one of the easiest omelets, seriously, it’s like homemade pizza, but classier and tastier! Preheat a grill pan on high heat - if you dont have one, a stove or regular nonstick pan will do.
Slice the tomato into 4-6 thick slices, and season them with salt and pepper. Brush both sides of the tomatoes with olive oil and cook them for a couple of minutes on both sides. Put the tomatoes aside for know.
Mix the eggs, the salt, and pepper in a bowl.
Add the eggs mix to a preheated nonstick pan. Let the omelet cook over medium heat for a while, DON'T TOUCH IT yet.
Once the eggs have set (you can judge by the edges), add the tomato slices one by one before adding the cheese.
Gently move the omelet onto a beautiful plate and place the fresh basil leaves, and voilá! You are ready to dig in.
