In the cooking world, there are many lords and ladies. Yet the most important one is Lord Hamton. That pink color, soft texture, intense flavor… You cannot compare to that. Hands down supreme. Like, don’t-even-try-to-be-his-equal supreme. We think we’ve made our point by now.

Ingredients:
 1 tsp whatever oil you want. Or butter. Mmm, butter 🤤
 4 eggs.
 ¼ cup of Emmental cheese, shredded (the soft, yellow one, with big holes that you always saw in cartoons).
 Quality ham. Big pieces. Go big or home. The sky is the limit.
 Cut some chives over the Lord, you will be pleased.
 Salt and pepper (optional).

This is how it goes:

Whisk the eggs in a bowl and add the milk, salt, and pepper. Whisk until it’s blended.

Get a nonstick pan where you can pour the mix without it turning into chaos (one about the size of a regular plate should do), preheat it at medium-high heat for a couple of minutes and then pour the mix.

Once the eggs have set –you can judge by the edges– but the center is still soft and mushy, add the ham and the cheese.

Give it some minutes. 3, 4, 5… You know, enough for it to cook and look golden, but not enough so it sets off the smoke alarm.

BEFORE IT IS COMPLETELY DONE AND SETTLED, add the chives and take a moment to think about HOW. DELICIOUS. THIS. GONNA. TASTE, MY GOD. SO EASY YET SO TASTY!
